If people arent meant to eat processed meat or cheap chicken what are less well off people meant to eat?

having watched the start of hughs chicken run programme and him on richard and judy i find it slightly worrying to hear him saying chicken should not be cheap as it was never meant to be as overused as it is and it wasnt always that way in the past, which is true, so instead of cheap chicken should less well off people go back to eating tripe or brawn or tongue or every peice of offal from the animals they can no longer afford or should they go for jamies turkey twizzlers
